Texas Scones


Original winning scones now have a alternate version
Texas Style Scones–
Do not rush this method, it will not be the same, using your clean hands to assemble.

1 Cup, sundried raisins
2 Tablespoons, dark molasses
1 Tablespoon, vanilla
2 teaspoons each of nutmeg, cardamom, clove, allspice, cinnamon
Mix the flour, sugar, salt, baking powder, nutmeg, cardamom in a bowl and place aside and this should have the aroma of a Danish bakery.
In small bowl, beat 1 egg, add the milk (I use soy milk) and add the vanilla (all the wet stuff).

In the dry ingredient bowl, with your clean hand (very important part of my scones, no machines or tools). Break up the butter (at room temperature unsalted butter) and mix with your fingers long enough to resemble coarse cornmeal. Slowly breathe deep in this aroma. Remember this smell. Let it transport you to pleasant childhood memories or let it create pleasant new memories not yet thought. Set it rest as you mix the next part.

In another small bowl add the raisins, clove, allspice, cinnamon and mix very well. Add the molasses, mix with your fingers. Set aside.

Back to the dry bowl, form the dough on to wax paper to a small pizza using another wax paper on top. Now with your pizza dough on the wax paper, add the raisin mixture on the top of this dough. Take one edge and roll like a jelly roll all the way to form a log. You should have the raisin mixture rolled inside the dough. Place both ends of the log together like a ring. Flip the dough over so the ends are at the bottom and the other half is up in the air. Squish the top down flat onto the wax paper so it is round again.

From pizza shape + add filling + reshaped for layers to form + final shape and cutting.
The reason for the shaping for the filling to layer inside the dough like croissants. The final pizza shape is cut into pie slices, 8 pieces. Place on parchment paper so that no sides are touching. Brush with whole beaten egg. Sprinkle with cinnamon sugar and bake. 12-15 min. Oozing a little bit of the raisin mixture is fine.

It is a gift, of transforming your energy to your family and friends. If you make this with haste, with the wrong desires, it may cause undo sadness and ill heart to those that eat of this recipe. That is the reason to continue to enjoy cooking and baking for your family as you can heal a broken heart, return health to ill people and share your happiness with family and friends.
